Many people dislike MDM because it monitors their activity on the device. This made me wonder whether the technology can track my browsing history, especially if I'm using an iOS device.

MDM is just management software, so your IT department can install extra invasive tools with something like Jamf. However, they can't monitor your Safari or Chrome history.
Some of the other things MDM is capable of include limiting the websites you can access, blocking a web browser session, and forcing the user to apply VPN access to a corporate network.
Many corporate iPhone users have this question on their minds. We'd like to view this question from three angles.
If you're using a corporate WiFi network, the IT team can determine if you are present there.
The same applies when your organization uses tracking through a cellular carrier.
With an MDM, the IT department can only track your device if they manage to place it in managed lost mode.
The Managed Lost Mode only appears on supervised iDevices. And only those registered on the MDM portal can locate the device.
The mode should be disabled before the tablet or phone is used again, and it is not permanent.
When it comes to email, the IT department can see that you've used a personal email account.
However, they can't read what you send if you're using webmail. On a local Mail app, they cannot view your emails at all.
That said, they can specify whether you can add or delete mail accounts outside of their initial allotment.
Just like with email, MDM doesn't have a protocol to view, delete or modify images in the iCloud Photos or standard Photos app.
They can deactivate iCloud Photos, though, which might be to prevent users from overstuffing a managed Apple ID with personal media.
It's also worth noting that apps that request permission to access your photo library can view your gallery and the location data stored within your images.
What about iMessages? Your IT department can't view them, tough MDM can provide them with some information on the number of messages or contacts you have.
For specific settings, the IT department can deactivate the Message application. Note that if you sign in to iMessage on a company-issued device, you can unlock to see your messages, but the IT team can only manage them remotely.
Cellular carriers can view messages, but this doesn't stand for Apple devices or iMessages.
WiFi routers store logs, so if you use the company's WiFi, they can see your browsing history. However, they can't see view the exact page content if you have HTTPS enabled.
Any HTTPS website would prevent the website admin from seeing what info you enter on its web pages. That being said, the WiFi admin can see how long you stay on a particular page or site.
So in short, WiFi providers can see your browsing history. WiFi admins can see it too and even use a packet sniffing tool to gain access to your browsing data.
